  • 2 lb chicken breasts
  • 2 tbsp taco seasoning
  • 2 cup rice
  • 15 oz black beans, drained
  • 2 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese
  • 2 limes

Steps

  1. Season chicken with taco seasoning and roast at 425°F (220°C) for 20-22 minutes; slice.
  2. Cook rice and stir in lime juice.
  3. Portion rice, chicken, beans, corn, and cheese into 5 containers.
  4. Top with salsa before eating; keeps 4 days refrigerated.

Baked Turkey Meatballs & Veg

Ingredients

  • 2 lb ground turkey
  • ½ cup breadcrumbs
  • 1 egg
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 4 cup broccoli florets
  • 2 cup marinara sauce

Steps

  1. Mix turkey, breadcrumbs, egg, garlic, and seasoning; roll into 20 meatballs.
  2. Bake with the broccoli on a sheet pan at 400°F (205°C) for 18-20 minutes.
  3. Portion meatballs, broccoli, and rice into containers.
  4. Spoon marinara over the meatballs; reheat covered.

Peanut Butter Overnight Oats
